- 1 (10-ounce) can diced tomatoes with green chiles (such as Rotel)
- Salt and pepper, to taste
- 8 oz. processed cheese (such as Velveeta), cubed
- Fresh cilantro, for serving
Instructions
- Combine all canned ingredients: Without draining, empty the cans of no-beans chili, black beans, kidney beans, pinto beans, diced tomatoes, corn, and diced tomatoes with green chiles into a large pot.
- Boil and simmer: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 10 to 15 minutes to meld the flavors together. Season with salt and pepper to taste.
- Incorporate cheese: Add the cubed processed cheese into the hot soup, stirring continuously until the cheese is fully melted and the soup is creamy.
- Serve: Ladle the soup into bowls and garnish with fresh cilantro, if desired. Serve immediately for best flavor and texture.
