  • 1 small red onion, diced
  • 1 cup of kalamata olives, halved
  • 1 (15.5-ounce) can of chickpeas or cannellini beans, drained and rinsed
  • 1 cup of chopped fresh parsley

Instructions

  1. Step 1: In a medium pot, combine the vegetable broth and farro. Cook following the package instructions until tender. Once cooked, drain the farro in a colander and let it sit to remove any excess liquid.
