Ingredients
Scale
Beef and Sauce
- 1 pound beef sirloin, sliced into thin strips
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup sour cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Base
- 12 ounces egg noodles (or your choice of base)
Instructions
- Cook the Noodles: Begin by boiling water in a large pot. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
- Sear the Beef: In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef strips and cook for about 3-4 minutes until browned. Remove the beef and set it aside.
- Sauté Onions and Garlic: In the same skillet, add the remaining olive oil and sauté the chopped onion for 2-3 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Add the Mushrooms: Stir in the sliced mushrooms and cook for about 5 minutes until they are softened and browned.
- Thicken with Flour: Sprinkle the flour over the mixture and stir well to coat all the ingredients. Cook for 1 minute.
- Add Broth and Worcestershire Sauce: Gradually pour in the beef broth and Worcestershire sauce, stirring continuously until the sauce begins to thicken.
- Incorporate the Sour Cream: Reduce the heat to low, and add the sour cream. Stir until well combined, and cook for another 2 minutes. Season with salt and pepper to taste.
- Return the Beef: Add the cooked beef back into the skillet, stirring to coat it with the sauce. Heat through for another couple of minutes.
- Serve Immediately: Combine the Stroganoff with the cooked noodles or serve it separately. Garnish with chopped parsley.
Notes
- Use sirloin or a similar tender cut of beef for the best texture.
- Do not overcook the beef strips to keep them tender.
- You can substitute sour cream with Greek yogurt for a lighter version, but add it off the heat to prevent curdling.
- Egg noodles are traditional, but rice, mashed potatoes, or pasta can also be used as the base.
- For a richer sauce, add a splash of heavy cream along with the sour cream.
- Make sure to season to taste near the end to avoid oversalting.
