  • 2 ¾ cups self-rising flour

  • ¼ tsp bicarbonate soda
  • 1 cup + 3 tbsp light brown sugar
  • 1 ½ cups milk (soya milk used) + 1 tsp vinegar
  • ½ cup soya yogurt
  • ½ cup light olive oil or vegetable oil
  • 1 tsp sweet cinnamon

Filling:

  • 2 Granny Smith apples, diced
  • ⅓ cup sugar
  • 1 tsp sweet cinnamon
  • 2 tbsp cornflour
  • 2 tsp water
  • ⅓ cup brown sugar
  • 1 tsp sweet cinnamon

Glaze:

  • 1 ¾ cups powdered sugar
  • ¼ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Apple Filling: In a saucepan, combine diced apples, sugar, cinnamon, cornflour, and water. Cook over medium heat for 5-6 minutes, stirring occasionally, until the apples soften and the mixture thickens. Remove from heat and let it cool.
  2. Preheat the Oven: Set your oven to 340°F (171°C) and line an 8-inch square baking dish with parchment paper, lightly greasing it to prevent sticking.
  3. Create Buttermilk Substitute: Mix the milk and vinegar in a small bowl and let it stand for 10 minutes to curdle slightly, creating a buttermilk substitute.
  4. Mix Wet Ingredients: Pour the curdled milk into a large mixing bowl along with soya yogurt, oil, and 1 cup of the light brown sugar. Stir to combine.
  5. Add Dry Ingredients: Sift together self-rising flour, baking powder, bicarbonate soda, and cinnamon into the wet ingredients. Gently fold the mixture until just combined, careful not to overmix.
  6. Assemble the Cake: Spread half of the cake batter evenly into the prepared pan. Carefully layer the cooled apple filling on top to cover the batter. Sprinkle 2/3 of the brown sugar and cinnamon mixture over the apples. Cover with the remaining batter, smoothing the surface, and sprinkle the remaining brown sugar mixture on top.
  7. Bake: Place the cake in the oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  8. Prepare the Glaze: While the cake is baking, whisk together powdered sugar, milk, and vanilla extract in a bowl until smooth and creamy.
  9. Glaze the Cake: Remove the cake from the oven and let it cool for 10 minutes. Poke holes in the warm cake using a skewer or fork, then pour the glaze evenly over the top, allowing it to soak into the holes and cover the surface.
