Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and allow it to fully preheat to ensure an even baking temperature.
  2. Mix wet ingredients: In a large bowl, whisk together the applesauce, water, oil (or additional applesauce if preferred), vanilla extract, and white vinegar until well combined and smooth.
  3. Add dry ingredients: Gradually add the flour, sugar, salt, baking soda, baking powder, cinnamon, and optional allspice to the wet mixture. Stir gently until a uniform batter forms, being careful not to overmix.
  4. Include optional add-ins: If using, fold in raisins, chopped walnuts, or shredded coconut to the batter to add texture and extra flavor.
  5. Prepare the pan: Grease an 8-inch cake pan or line it with parchment paper to prevent sticking.
