Instructions
- Make the Dressing: In a medium high-sided bowl or mason jar, combine the freshly squeezed lime juice, extra virgin olive oil, and honey. Whisk vigorously with a fork or shake if using a jar until the mixture is emulsified and well combined.
- Combine Salad Ingredients: In a large serving bowl, place the arugula, diced mango, diced avocado, and thinly sliced red onions. Gently toss these together to mix.
- Dress the Salad: Drizzle the prepared dressing over the salad ingredients. Toss gently until everything is evenly coated with the dressing. Add pine nuts on top to finish.
