Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) and lightly grease a large baking dish to prevent sticking and make cleanup easier.
  2. Season the chicken: In a bowl, rub the chicken breasts with olive oil, minced garlic, dried thyme, oregano, smoked paprika, salt, and black pepper. Let the chicken marinate for 10 minutes to absorb the flavors.
  3. Prepare the vegetables: Spread the sliced zucchini and cherry tomatoes evenly in the greased baking dish. Drizzle lightly with olive oil and season with salt and pepper to taste.
  4. Assemble the dish: Place the seasoned chicken breasts on top of the vegetables, and spoon any remaining seasoning mixture over the chicken to enhance flavor.
  5. Bake: Place the dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 75°C (165°F).
