- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese

Quesadillas
- 4 large flour tortillas
- 2 tablespoons olive oil
Instructions
- Prepare the BBQ Chicken Mixture: In a medium bowl, combine the cooked shredded chicken with the barbecue sauce until all the chicken is evenly coated with the sauce.
- Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm up.
- Assemble the Quesadilla: Place one flour tortilla in the heated skillet. Sprinkle 1/2 cup of shredded cheddar cheese evenly on the tortilla, then spread 1/2 cup of the BBQ chicken mixture over the cheese, followed by another 1/2 cup of shredded cheddar cheese on top.
- Top and Cook: Cover the filling with a second tortilla. Let it cook for 3 to 4 minutes until the bottom tortilla turns golden brown and the cheese begins to melt.
- Flip the Quesadilla: Carefully flip the quesadilla using a spatula and cook the other side for an additional 3 to 4 minutes until it is also golden and the cheese is fully melted through the filling.
- Repeat the Process: Remove the cooked quesadilla from the skillet and set aside. Add the remaining tablespoon of olive oil if needed and repeat the assembly and cooking process with the remaining tortillas and BBQ chicken filling.
- Serve: Once all quesadillas are cooked, slice each into wedges, garnish with chopped green onions if desired, and serve warm for the perfect easy dinner.
