  • 4 cups fresh or frozen cut green beans
  • 4 cups fresh or frozen corn

  • 2 cups water
  • 4 cups tomato juice

  • 1/2 pound ground beef, cooked and drained

Seasonings

  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2 bay leaves

Instructions

  1. Prepare and simmer root vegetables: In a large saucepan, combine the peeled and cubed potatoes, sliced carrots, chopped onion, water, salt, and pepper. Bring the mixture to a boil over medium-high heat.
  2. Simmer until tender: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 25 minutes or until the potatoes and carrots are tender when pierced with a fork.
  3. Add remaining ingredients: Stir in the cooked and drained ground beef, green beans, corn, tomato juice, Italian seasoning, garlic powder, and bay leaves to the saucepan. Mix well to combine all ingredients.
  4. Cook to meld flavors: Cover the pan again and simmer for an additional 30 minutes, stirring occasionally to prevent sticking and to ensure even heating.
  5. Finish and serve: Before serving, remove and discard the bay leaves. Adjust seasoning with additional salt and pepper if needed, then ladle the soup into bowls and serve hot.

Notes

  • Use fresh or frozen vegetables based on availability; frozen vegetables can be added directly without thawing.
  • Brown and drain the ground beef ahead of time to reduce fat content and enhance flavor.
  • For a thicker soup, mash some of the potatoes during cooking or add a small amount of cornstarch slurry at the end and cook until thickened.
