- 4 cups fresh or frozen cut green beans

- 4 cups tomato juice

- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 2 bay leaves
Instructions
- Prepare and simmer root vegetables: In a large saucepan, combine the peeled and cubed potatoes, sliced carrots, chopped onion, water, salt, and pepper. Bring the mixture to a boil over medium-high heat.
- Simmer until tender: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 25 minutes or until the potatoes and carrots are tender when pierced with a fork.
- Add remaining ingredients: Stir in the cooked and drained ground beef, green beans, corn, tomato juice, Italian seasoning, garlic powder, and bay leaves to the saucepan. Mix well to combine all ingredients.
- Cook to meld flavors: Cover the pan again and simmer for an additional 30 minutes, stirring occasionally to prevent sticking and to ensure even heating.
- Finish and serve: Before serving, remove and discard the bay leaves. Adjust seasoning with additional salt and pepper if needed, then ladle the soup into bowls and serve hot.
Notes
- Use fresh or frozen vegetables based on availability; frozen vegetables can be added directly without thawing.
- Brown and drain the ground beef ahead of time to reduce fat content and enhance flavor.
- For a thicker soup, mash some of the potatoes during cooking or add a small amount of cornstarch slurry at the end and cook until thickened.
- This soup can be refrigerated for up to 4 days and also freezes well for up to 3 months.
- Make it vegetarian by omitting the ground beef and adding beans or lentils for protein.
