- Assemble Turnovers: Preheat oven to 400°F and line a baking sheet with parchment paper. Roll out the thawed puff pastry on a lightly floured surface and cut each sheet into 4 even squares. Spoon about 2 tablespoons of the cooled blackberry filling onto the center of each square. Whisk together egg and water to make an egg wash, then brush the edges of each puff pastry square. Fold the squares diagonally to form triangles, carefully sealing edges with a fork to keep filling contained.
