Ingredients

Scale

Beef Mixture

  • 1.5 pounds lean ground beef
  • 1 yellow onion, diced
  • 1 tablespoon chopped garlic
  • 10.5 ounces condensed cheddar soup
  • 10.5 ounces condensed cream of mushroom soup
  • 0.5 cup milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese (for mixing into beef)
  • 1 cup shredded cheddar cheese (for topping beef)

Biscuit Batter

  • 1 box Cheddar Bay Biscuit mix with seasoning packet
  • 1 cup shredded cheddar cheese
  • 2 cups milk

Topping

  • 0.25 cup butter, melted
  • Cheddar Bay Biscuit seasoning packet (reserved from biscuit mix)
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and allow it to fully heat before baking.
  2. Cook Ground Beef and Onions: Heat a large nonstick skillet over medium-high heat. Add the ground beef and diced yellow onion, breaking up the beef as it cooks. Sauté for 7–8 minutes until the beef is browned and the onions are softened.
  3. Combine Soups and Cheese: Stir in the chopped garlic, condensed cheddar soup, condensed cream of mushroom soup, 0.5 cup milk, salt, and pepper. Mix until smooth and fully blended. Add 1 cup shredded cheddar cheese and stir until melted, then remove from heat.
  4. Prepare Baking Dish: Lightly coat a 9×13-inch baking dish with cooking spray. Spread the beef mixture evenly in the dish, then sprinkle the remaining 1 cup shredded cheddar cheese on top.
  5. Make Biscuit Batter: In a large bowl, empty the Cheddar Bay Biscuit mix (reserve the seasoning packet). Add 1 cup shredded cheddar cheese and 2 cups milk. Stir until the batter is smooth and lump-free.
  6. Top with Biscuit Batter and Bake: Pour the biscuit batter evenly over the beef layer in the baking dish. Bake for 50–55 minutes, until the topping is golden brown and fully baked through.
  7. Prepare Butter Topping: While the casserole bakes, mix the melted butter with the reserved Cheddar Bay Biscuit seasoning packet until combined.
  8. Finish and Serve: Remove the casserole from the oven and immediately brush the hot biscuit topping with the butter-seasoning mixture. Let it stand for 5 minutes, then garnish with fresh chopped parsley before serving.

Notes

  • Make sure to fully brown the beef to bring out the best flavors and ensure food safety.
  • Reserve the biscuit seasoning packet to create the signature buttery topping for an authentic Cheddar Bay flavor.
  • Letting the casserole rest after baking helps the flavors meld and prevents burns when serving.
  • You can substitute the condensed cheddar soup with a homemade cheese sauce if preferred for a fresher taste.
  • This dish is perfect for preparing ahead; you can assemble it and refrigerate before baking the next day.
