Description

Chicken Cobbler Casserole is a comforting and hearty dish featuring tender cooked chicken and mixed vegetables in a creamy sauce, topped with a fluffy biscuit-like dough and melted cheddar cheese. Perfect for a family dinner, this casserole combines savory flavors and a satisfying texture all baked to golden perfection.

Ingredients

Scale

Chicken Mixture

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 10.5 oz can cream of chicken soup
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Biscuit Topping

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.25 cup unsalted butter, melted
  • 0.75 cup shredded cheddar cheese
  • 0.5 cup buttermilk

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole evenly.
  2. Cook Chicken: In a skillet over medium heat, cook the bite-sized chicken pieces until browned and fully cooked through, about 5–7 minutes. Remove from heat and set aside.
  3. Prepare Chicken Mixture: In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until well combined to form a creamy filling.
  4. Assemble Chicken Layer: Grease a 3-quart casserole dish and pour the chicken mixture evenly into it, spreading out to create an even layer.
  5. Make Biscuit Topping: In a separate bowl, mix the flour, baking powder, and melted butter. Gradually add the buttermilk, stirring gently until just combined to form a biscuit batter.
  6. Add Biscuit Layer: Spoon the biscuit batter evenly over the chicken mixture in the casserole dish, spreading it carefully to cover the surface.
  7. Add Cheese: Sprinkle the shredded cheddar cheese evenly on top of the biscuit layer for a cheesy, golden crust.
  8. Bake: Place the casserole in the preheated oven and bake for 30–35 minutes or until the biscuit topping turns golden brown and is cooked through.
  9. Cool and Serve: Remove the casserole from the oven and allow it to cool for a few minutes before serving. This helps the casserole set and makes serving easier.

Notes

  • Make sure the chicken is cooked thoroughly before mixing to ensure food safety.
  • You can substitute frozen mixed vegetables with fresh or other veggies of your choice.
  • For a richer flavor, use whole milk instead of low-fat milk.
  • Feel free to add herbs like thyme or parsley to the chicken mixture for extra depth.
  • If you prefer a spicier dish, add a pinch of cayenne pepper or chili flakes to the mix.
