  • 3 tablespoons chipotles in adobo (about 12 peppers with sauce)

  • ½ tablespoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried oregano
  • ½ cup (109 g) vegetable oil

Instructions

  1. Combine Ingredients: Add the red wine vinegar, water, chipotles in adobo sauce, honey, kosher salt, black pepper, and dried oregano into the bowl of a blender and blend until well combined.
  2. Emulsify Oil: With the blender running on low speed, slowly drizzle in the vegetable oil to emulsify the mixture and create a smooth, cohesive vinaigrette.
  3. Store Vinaigrette: Pour the finished vinaigrette into a container with a tight-fitting lid and chill in the refrigerator.
  4. Refrigerate: Store the vinaigrette in the refrigerator for up to 5 days, shaking or stirring before each use to re-emulsify if separation occurs.
