- 1 box Lime Jello (3 oz)
- 1 box Strawberry Jello (3 oz)
- 1 ½ cups plain Greek Yogurt (divided)
- 6 ½ cups sweetened Desiccated Coconut (divided)
Instructions
- Prepare Surface: Cover a movable surface, such as a baking sheet, with parchment paper and set aside to place the rolled balls after coating.
- Divide Jello: Get two medium mixing bowls. Put the lime jello powder in one bowl and the strawberry jello powder in the other to keep the colors separate.
- Add Yogurt: Place ¾ cup plain Greek yogurt into each bowl with the jello powders.
- Add Coconut: Add 2 ½ cups of sweetened desiccated coconut into each bowl to the yogurt and jello powders.
- Mix: Stir each bowl using different utensils carefully to avoid mixing the colors. Mix thoroughly until all ingredients are fully combined into a thick mixture.
- Prepare Coating Bowls: Get two small bowls and place ¾ cup of sweetened desiccated coconut into each to be used for coating the jello balls.
- Form Red Jello Balls: Wearing gloves, roll the red mixture (strawberry) into balls about 1 tablespoon in size. Immediately roll each ball in one of the coconut bowls until fully coated, then place on the prepared parchment-lined surface.
- Form Green Jello Balls: Repeat the rolling and coating process with the green mixture (lime) using the second coconut bowl to keep colors separate.
- Chill: Place all coated jello balls in the refrigerator, uncovered, for 4 hours or until they are fully set and firm.
- Serve: Enjoy these festive jello balls as a fun and colorful holiday treat!
