Instructions

  1. Blend Cottage Cheese and Milk: Combine the cottage cheese and milk in a high-speed blender and blend until the mixture is completely smooth, ensuring a creamy base for the Alfredo sauce.
  2. Sauté Garlic: Heat olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Combine Sauce Ingredients: Lower the heat to low, then pour in the blended cottage cheese mixture. Add the parmesan cheese and Italian seasoning to the pan and gently stir while cooking on very low heat. This allows the parmesan to melt slowly without curdling the sauce.
  4. Cook Pasta: Meanwhile, cook your pasta of choice according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta. Rinse the noodles under cool water to prevent overcooking.
