Ingredients

Scale

Vegetables and Aromatics

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped

Wet Ingredients

  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1/2 cup milk

Cheese

  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)

Seasonings

  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the quiche.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, sautéing for 3 to 4 minutes until they soften.
  3. Cook Spinach: Add chopped spinach to the skillet and cook until wilted, about 2 to 3 minutes. Season with garlic powder, salt, and pepper. Remove from heat and let cool slightly.
  4. Prepare Egg Mixture: In a large bowl, whisk together eggs, milk, and cottage cheese. Stir in Italian seasoning, salt, and pepper for flavor.
  5. Combine Ingredients: Fold the shredded cheese and sautéed vegetable mixture into the egg mixture, ensuring everything is evenly combined.
  6. Pour into Dish: Grease a 9-inch pie dish and pour the mixture in, spreading it evenly across the dish.
  7. Bake: Bake the quiche in the preheated oven for 40 to 45 minutes, or until the top turns golden and the center is set.
  8. Cool and Serve: Let the quiche cool for 5 to 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use fresh spinach for the best flavor; frozen spinach can be substituted but must be thoroughly drained.
  • You can customize the cheeses according to your preference, mixing mozzarella or Swiss for different textures.
  • For a dairy-free version, substitute cottage cheese with silken tofu and use non-dairy cheese alternatives.
  • This quiche can be made ahead and refrigerated, then reheated for a quick meal.
  • Make sure to grease the pie dish well to prevent sticking since this is a crustless quiche.
