Instructions

  1. Prepare the filling: In a medium bowl, combine the cream cheese, green onions, red bell pepper, lump crab meat, Old Bay seasoning, garlic powder, Worcestershire sauce, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Assemble egg rolls: Lay an egg roll wrapper on a clean, flat surface with a corner pointing towards you forming a diamond shape. Spoon about 2–3 tablespoons of the crab filling near the bottom corner. Fold the bottom corner over the filling, then fold the sides in tightly and roll the wrapper upwards towards the top corner. Brush the top edge with the beaten egg to seal the roll securely.
  3. Heat oil: Pour vegetable oil into a deep skillet or frying pan to a depth of 2–3 inches. Heat the oil to 350°F (175°C), ensuring it is hot enough for frying but not smoking.
  4. Fry egg rolls: Carefully place the assembled egg rolls in the hot oil in batches to avoid overcrowding. Fry each side for about 2–3 minutes or until the egg rolls turn golden brown and crispy. Use tongs to turn them as needed for even cooking.
  5. Drain and serve: Remove the fried egg rolls from the oil and place them on paper towels to drain excess oil. Serve warm alongside your choice of dipping sauces such as spicy mayo, cocktail sauce, or sweet chili sauce.
