Cranberry Feta Pinwheels Recipe

  • Author: Charlotte
  • Total Time: 1 hour 15 minutes
  • Yield: Approximately 48 pinwheels (12 slices per tortilla roll, 4 tortillas total) 1x
  • Diet: Vegetarian

Description

Cranberry Feta Pinwheels are a delightful and easy-to-make appetizer featuring a creamy blend of spreadable cream cheese, sweet dried cranberries, tangy feta cheese, and fresh green onions, all rolled up in soft flour tortillas. Perfect for parties, holiday gatherings, or as a tasty snack, these pinwheels offer a balance of sweet and savory flavors with a creamy texture and a festive look.

Ingredients

Scale

Pinwheel Filling

  • 1 tub (250g) spreadable cream cheese
  • 2 to 3 teaspoons milk
  • 1 package (6 ounces) sweetened dried cranberries, chopped (about 1 cup)
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped green onions

Wrap

  • 4 large regular or spinach flour tortillas

Instructions

  1. Prepare the filling: In a medium bowl, blend the cream cheese and milk together until the mixture is loose and creamy. Then fold in the chopped dried cranberries, crumbled feta cheese, and chopped green onions evenly.
  2. Spread on tortillas: Divide the creamy mixture evenly among the tortillas and spread each one out smoothly to cover the surface.
  3. Roll and chill: Roll each tortilla tightly into a log shape. Wrap each rolled tortilla securely in plastic wrap, and refrigerate for at least one hour, or up to several hours, to chill and firm up.
  4. Slice and serve: Remove the rolls from the fridge and unwrap. Using a serrated knife, slice each rolled tortilla into approximately 12 pinwheel slices. Serve chilled as a festive appetizer or snack.

Notes

  • Chilling the rolls is essential for easy slicing and to help the pinwheels hold their shape.
  • For a gluten-free option, substitute the flour tortillas with gluten-free tortillas.
  • These pinwheels can be prepared a day in advance and stored covered in the refrigerator.
  • Use spinach tortillas for a colorful, nutrient-rich variation.
  • If desired, substitute feta with goat cheese for a creamier texture and different flavor.
