  • 3 cups chicken broth
  • 1 cup milk
  • 1 tablespoon Tamari sauce

  • ½ cup sour cream
  • 1 tablespoon lemon juice
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Ground chili pepper, to taste

Instructions

  1. Sauté Onions: In a large pot over medium heat, melt the butter. Add the finely chopped onion and cook for 3–4 minutes until soft and translucent, stirring occasionally to prevent burning.
  2. Cook Mushrooms: Add the sliced mushrooms to the pot and sauté them for 7–8 minutes until they release their moisture and become golden brown, stirring occasionally to ensure even cooking.
  3. Add Flour and Paprika: Sprinkle the flour and Hungarian paprika over the mushrooms. Stir well continuously for 1–2 minutes to evenly coat the mushrooms and eliminate the raw flour taste.
  4. Add Liquids: Gradually pour in the chicken broth while stirring constantly to avoid lumps. Add the milk and Tamari sauce, mixing everything together until well combined. Bring the soup to a gentle simmer.
  5. Simmer Soup: Let the soup simmer gently for 10 minutes, stirring occasionally to blend the flavors and thicken the soup slightly.
  6. Finish Soup: Remove the soup from heat. Stir in the sour cream, lemon juice, fresh parsley, dill, thyme, salt, black pepper, and ground chili pepper until smooth and completely combined.
  7. Rest and Serve: Allow the soup to rest for a couple of minutes to meld the flavors. Garnish with extra fresh herbs if desired and serve hot alongside crusty bread or a light salad.

  • Use cremini mushrooms for the best flavor, but portobello or bella mushrooms work as well.
