Soup Base
- 4 tablespoons butter
- 1 medium onion, finely chopped

- 1 tablespoon Hungarian paprika (or regular sweet paprika)
- 3 cups chicken broth
- 1 cup milk
- 1 tablespoon Tamari sauce
Finishing Ingredients
- ½ cup sour cream
- 1 tablespoon lemon juice
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh thyme, chopped
- Salt, to taste
- Black pepper, to taste
- Ground chili pepper, to taste
Instructions
- Sauté Onions: In a large pot over medium heat, melt the butter. Add the finely chopped onion and cook for 3–4 minutes until soft and translucent, stirring occasionally to prevent burning.
- Cook Mushrooms: Add the sliced mushrooms to the pot and sauté them for 7–8 minutes until they release their moisture and become golden brown, stirring occasionally to ensure even cooking.
- Add Flour and Paprika: Sprinkle the flour and Hungarian paprika over the mushrooms. Stir well continuously for 1–2 minutes to evenly coat the mushrooms and eliminate the raw flour taste.
- Add Liquids: Gradually pour in the chicken broth while stirring constantly to avoid lumps. Add the milk and Tamari sauce, mixing everything together until well combined. Bring the soup to a gentle simmer.
- Simmer Soup: Let the soup simmer gently for 10 minutes, stirring occasionally to blend the flavors and thicken the soup slightly.
- Finish Soup: Remove the soup from heat. Stir in the sour cream, lemon juice, fresh parsley, dill, thyme, salt, black pepper, and ground chili pepper until smooth and completely combined.
- Rest and Serve: Allow the soup to rest for a couple of minutes to meld the flavors. Garnish with extra fresh herbs if desired and serve hot alongside crusty bread or a light salad.

- Use cremini mushrooms for the best flavor, but portobello or bella mushrooms work as well.
