Ingredients
Scale
Meat and Vegetables
- 1 lb ground turkey or beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen corn
- 1 cup frozen mixed vegetables (peas, carrots, etc.)
Liquid and Seasoning
- 1 can (15 oz) coconut milk
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt, to taste
- Pepper, to taste
Topping
- 32 oz frozen tater tots (gluten-free)
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it’s at the perfect temperature for baking the casserole.
- Cook the meat: In a large skillet over medium heat, add the ground turkey or beef. Brown the meat, breaking it up with a spoon as it cooks, for about 5-7 minutes until fully cooked.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet with the meat. Cook for another 3-4 minutes until the onion is translucent and fragrant.
- Add vegetables and seasonings: Stir in the red bell pepper, frozen corn, frozen mixed vegetables, coconut milk, dried thyme, paprika, salt, and pepper. Let the mixture cook and combine for 5-7 minutes until heated through.
- Assemble the casserole: Transfer the meat and vegetable mixture into a 9×13 inch baking dish, spreading it evenly across the bottom.
- Add tater tot topping: Arrange the frozen tater tots in a single layer on top of the meat and vegetable mixture, covering it completely.
- Bake the casserole: Place the dish in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy on top.
- Cool and serve: Remove the casserole from the oven and let it cool for a few minutes before serving. This helps the layers set for easier portioning.
Notes
- For a vegetarian version, substitute the ground meat with plant-based protein and ensure vegetable broth is used instead of meat-based liquids.
- Make sure to use gluten-free labeled tater tots to maintain the gluten-free status of the dish.
- You can add extra spices such as smoked paprika or chili powder for a smoky or spicy twist.
- This casserole can be prepared ahead of time and refrigerated before baking for busy weeknights.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven for best texture.
