Instructions

  1. Boil the eggs: Place the eggs in a pot of cold water and bring it to a rolling boil. Once boiling, cover the pot and remove from heat. Let the eggs sit covered for 10–12 minutes to cook through. Drain the hot water, transfer the eggs to ice water to cool, and then peel the shells off.
  2. Halve and scoop: Slice the peeled eggs lengthwise in half. Carefully remove the yolks and place them in a bowl; set the egg whites aside on a serving plate.
  3. Make the filling: Mash the egg yolks together with ripe avocado (or mayonnaise if preferred) until the mixture is smooth. Add Dijon mustard, lemon juice, salt, pepper, and Greek yogurt or sour cream if using. Stir well until creamy, then fold in the finely chopped chives or parsley for fresh flavor.
  4. Pipe the “trees”: Transfer the yolk mixture into a piping bag fitted with a star tip. Pipe the filling into the hollow spaces of the egg whites, swirling upwards to create Christmas tree shapes with texture and height.
  5. Decorate: Sprinkle paprika or chili flakes over the piped filling to resemble garlands. Add tiny pieces of chopped red bell pepper or pimentos as ornaments. Top each tree with a small piece of yellow bell pepper or a star-shaped cheese piece to mimic a tree topper.
