Cookie Dough

  • 1/2 cup (8 Tbsp; 113g) unsalted butter
  • 2/3 cup (130g) packed light or dark brown sugar
  • 3/4 cup (75g) almond flour
  • 1/4 teaspoon salt
  • 1 Tablespoon (15ml) light or dark corn syrup or milk
  • 1 teaspoon pure vanilla extract

Optional Filling

  • 1/2 cup Nutella or melted chocolate

Instructions

  1. Melt Butter and Combine Ingredients: Melt the butter in a medium saucepan over low heat. Once the butter has melted, add the brown sugar, almond flour, salt, and your choice of corn syrup or milk. Cook and whisk the mixture for about 3-4 minutes until the sugar dissolves completely and all ingredients are fully combined. If you notice the butter separating, remove the pan from the heat and whisk vigorously until it recombines.
  2. Add Vanilla and Thicken Mixture: Remove the pan from heat and stir in the vanilla extract. The mixture will appear grainy yet shiny. Allow it to rest for 5 to 10 minutes to thicken as it cools while you preheat the oven.
  3. Preheat and Prepare Baking Sheets: Preheat your oven to 350°F (177°C). Line two to three large baking sheets with parchment paper or silicone mats to prevent sticking.
  4. Shape Cookies: Drop scant teaspoonfuls of the cookie mixture onto the prepared baking sheets, spacing them about 3 inches apart to allow spreading.
  5. Bake Cookies: Bake for 6 to 8 minutes until the edges turn golden brown and the cookies bubble and sizzle as they bake, indicating caramelization.
  6. Cool on Sheets: Let the cookies cool on the baking sheets for 5 minutes to firm up, then transfer them to a wire rack to cool completely. As they cool, the cookies will crisp up.
  7. Optional Sandwiching: Once completely cool, enjoy the cookies as-is or spread Nutella or melted chocolate on the bottom of one cookie and sandwich it with another for a decadent treat.
  8. Storage: Store plain cookies covered at room temperature up to 1 week. Cookies with filling keep fresh covered for 3 days at room temperature or for up to 1 week refrigerated.

  • If the melted butter separates from the mixture during cooking, remove the pan from heat and whisk vigorously—it will come back together.
  • Use a scant teaspoon of dough per cookie, not a tablespoon, for the proper thin, lace effect.
