Main Ingredients

  • 1 Rotisserie Chicken, shredded
  • 10.5 oz Cream of Mushroom Soup
  • 10.5 oz Cream of Chicken Soup
  • 14.5 oz French Style Green Beans, drained
  • 1 oz Lipton Onion Soup Mix
  • 2 cups Chicken Broth
  • 2 cups Minute Rice (uncooked)
  • 3 cloves Garlic, minced
  • 1 cup Refrigerated French Onion Dip
  • 1/2 cup Parmesan Cheese
  • 1 cup Cheddar Cheese, hand shredded
  • 1 cup French Fried Onions (divided)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Combine ingredients: In a large bowl, combine shredded rotisserie chicken, cream of chicken soup, cream of mushroom soup, Lipton onion soup mix, half of the French fried onions, drained green beans, chicken broth, minced garlic, uncooked minute rice, French onion dip, and Parmesan cheese. Lightly season with salt and pepper and stir everything until evenly mixed.
  3. Prepare casserole dish: Grease a 9 x 13 inch baking dish. Pour the combined mixture into the dish and smooth out the surface to create an even layer. Sprinkle additional Parmesan cheese over the top.
  4. Add toppings: Evenly distribute shredded cheddar cheese and the remaining French fried onions over the surface of the casserole.
  5. Bake the casserole: Place the uncovered dish on the center rack of the oven and bake for 35 minutes or until the casserole is hot, bubbly, and the cheese has melted.
  6. Rest and serve: Remove the casserole from the oven and let it rest for 5-10 minutes to set. Optionally garnish with dried parsley, then serve warm and enjoy your delicious French Onion Chicken and Rice Casserole.

Notes

  • You can substitute fresh green beans for canned if preferred, just be sure to blanch them before adding.
  • This casserole can be made ahead and refrigerated before baking; add a few extra minutes to the baking time if baking from cold.
  • If you prefer less sodium, opt for low-sodium soups and broth.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
  • For a vegetarian version, substitute the chicken and chicken broth with plant-based alternatives and ensure soups are vegetarian-friendly.
