This Greek Chicken Souvlaki recipe features tender, marinated chicken cubes grilled to perfection and glazed with a sweet and savory honey garlic sauce. Served with warm pita bread or rice, tzatziki sauce, and fresh parsley, it’s a flavorful and easy-to-make dish perfect for a quick weeknight dinner or casual gathering.

Ingredients

Scale

For the Chicken Marinade:

  • 1 ½ lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper, to taste

For the Honey Garlic Glaze:

  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tsp olive oil

For Serving:

  • Warm pita bread or rice
  • Tzatziki sauce
  • Fresh parsley and lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper. Add the cubed chicken pieces and toss well to evenly coat them with the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours to allow flavors to infuse.
  2. Prepare the Glaze: In a small bowl, whisk together honey, soy sauce, minced garlic, lemon juice, and olive oil until smooth. Set the glaze aside for later use.
  3. Assemble Skewers: Thread the marinated chicken pieces onto skewers, making sure they are evenly spaced for uniform cooking.
  4. Grill the Chicken: Preheat a grill pan or outdoor grill to medium-high heat. Place the skewers on the grill and cook for 8 to 10 minutes, turning occasionally to ensure even cooking, until the chicken is cooked through and has a slight char.
  5. Glaze and Serve: During the last 1 to 2 minutes of grilling, brush the chicken skewers generously with the honey garlic glaze, allowing it to caramelize slightly. Remove from grill and serve immediately with warm pita bread or rice, a drizzle of tzatziki sauce, fresh parsley, and lemon wedges.

Notes

  • For best results, marinate the chicken for at least 1 hour to enhance flavor and tenderness.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  • The glaze can be prepared in advance and stored in the refrigerator for up to 3 days.
  • Can be served with a side salad or grilled vegetables for a complete meal.
  • Adjust the amount of honey in the glaze to your desired sweetness level.
