This Greek Chicken Souvlaki features tender, juicy chicken marinated in traditional Mediterranean flavors and finished with a sweet and tangy maple mustard glaze. For the Chicken Marinade:
- 1 ½ lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt & pepper, to taste
For the Maple Mustard Glaze:
- 2 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1 tsp olive oil
- 1/2 tsp smoked paprika
- Salt & pepper, to taste
For Serving:
- Warm pita bread or rice
- Tzatziki sauce
- Sliced cucumber, tomato, and red onion
- Fresh parsley, for garnish
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until well combined. Add the chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse the chicken.
- Prepare the Glaze: In a small bowl, combine pure maple syrup, Dijon mustard, olive oil, smoked paprika, salt, and pepper. Mix thoroughly and set aside to use as a finishing glaze for the chicken.
- Thread the Chicken: After marinating, thread the chicken pieces onto skewers, ensuring they are evenly spaced to promote even cooking.
- Cook the Chicken: Heat a grill or skillet over medium heat. Cook the chicken skewers for 8 to 10 minutes, turning occasionally for even cooking, until the chicken is cooked through and develops a slight char on the edges.
- Glaze & Serve: During the last 1 to 2 minutes of cooking, brush the maple mustard glaze generously over the chicken skewers. Remove from heat and serve immediately with warm pita bread or rice, a side of tzatziki sauce, sliced cucumber, tomato, red onion, and garnish with fresh parsley.
Notes
- Soaking wooden skewers in water for 30 minutes before threading helps prevent them from burning during cooking.
- Chicken can be cooked entirely on a skillet if a grill is not available, but grilling imparts extra smoky flavor.
- Adjust the amount of maple syrup in the glaze for more or less sweetness depending on your preference.
- Serve with extra lemon wedges for added brightness.
