  • Yield: 4 servings 1x

Description

A flavorful and quick Ground Beef and Broccoli stir-fry featuring tender ground beef in a savory Japanese BBQ sauce, paired with crisp broccoli, carrots, and aromatic garlic and ginger. Perfect for a satisfying weeknight dinner served on its own or over rice.

Ingredients

Scale

Ground Beef Mixture

  • 1.5 lb. ground beef
  • 1 teaspoon sea salt
  • ⅓ cup Japanese BBQ sauce (or stir fry sauce, more for extra saucy meat)

Vegetables & Sauce

  • 1 tablespoon sesame oil*
  • 1 teaspoon sea salt
  • ½ large yellow onion, diced
  • 4 cups chopped fresh broccoli, cut into pieces
  • 2 large carrots, sliced into coins
  • 3 cloves garlic, thinly sliced or minced
  • 1 tablespoon ginger paste or 2 tablespoons freshly grated ginger
  • ½ cup beef broth
  • 2 tablespoons soy sauce

Garnish

  • 4 green onions, diced
  • 2 teaspoons sesame seeds
  • Optional: sriracha and kewpie mayonnaise for serving

Instructions

  1. Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef, season with 1 teaspoon sea salt, and break into small pieces. Cook until almost browned. Stir in the Japanese BBQ sauce and continue cooking until the beef is fully cooked. Transfer to a bowl and set aside.
  2. Sauté the Vegetables: In the same skillet, heat 1 tablespoon sesame oil over medium heat. Add diced onion, chopped broccoli, and sliced carrots. Season with 1 teaspoon sea salt and sauté for 3-5 minutes until vegetables start to soften. Add garlic and ginger paste, cooking until fragrant.
  3. Add Liquids and Simmer: Pour in ½ cup beef broth and 2 tablespoons soy sauce. Stir well and bring to a gentle boil. Reduce heat to low and simmer for 5-10 minutes until the sauce thickens and the vegetables are tender but still crisp.
  4. Combine Beef and Vegetables: Push the vegetables to one side of the skillet and add the cooked ground beef back in. Stir together and warm through for 1-2 minutes.
  5. Serve and Garnish: Serve the beef and broccoli mixture on its own or over warm white rice. Garnish with diced green onions and sesame seeds. Add sriracha and kewpie mayonnaise if desired for extra flavor and creaminess.

Notes

  • For extra saucy beef, increase the Japanese BBQ sauce to ½ cup.
  • Feel free to substitute broccoli with other green vegetables like bok choy or snap peas.
  • To make it gluten-free, use tamari instead of soy sauce.
  • Add chili flakes or fresh chili for a spicier version.
  • This recipe reheats well for meal prep lunches throughout the week.
