Scale
Sweet Potato Roasting
- 1 pound sweet potatoes, peeled and diced
- 2 Tablespoons olive oil
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika
Ground Beef
- 1 pound lean ground beef
- 1 teaspoon 7 spice
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
Toppings
- 1 cup cottage cheese
- 1 cup diced cucumber
- 1 cup chopped tomatoes
- ½ cup sliced radishes
- ¼ cup sliced red onions
- ¼ cup olives (Kalamata or green)
- ¼ cup feta cheese, crumbled
- Hot honey (optional but recommended)
- Hummus (optional but recommended)
Instructions
- Roast the sweet potatoes: Preheat your oven to 425°F (220°C). Toss the peeled and diced sweet potatoes with olive oil, sea salt, black pepper, and smoked paprika until evenly coated. Spread them in a single layer on a baking sheet.
- Roasting process: Place the sweet potatoes in the oven and roast for 25 to 30 minutes, flipping halfway through to ensure they become golden and tender.
- Brown the ground beef: While the potatoes roast, heat a skillet over medium heat. Add the lean ground beef and cook until it starts to brown.
- Season the beef: Sprinkle the 7 spice, sea salt, and ground black pepper over the beef. Continue cooking until the meat is fully browned and fragrant, breaking it up as it cooks.
- Assemble the bowls: Start with a base of the roasted sweet potatoes in each bowl. Layer on the seasoned ground beef.
- Add fresh toppings: Add cottage cheese, diced cucumber, chopped tomatoes, sliced radishes, sliced red onions, olives, and crumbled feta cheese on top of the beef.
- Optional finishing touches: For extra flavor, add a dollop of hummus and drizzle hot honey over the bowl if desired. Serve immediately and enjoy.
Notes
- Use lean ground beef for a healthier option.
- Adjust spices according to your taste preference.
- Hot honey and hummus add a nice balance of sweet and savory but can be omitted for a simpler bowl.
