Instructions
- Brown the Meat and Vegetables: In a medium-sized soup or stock pot, heat the olive oil over medium heat. Add ground beef, diced onion, celery, and minced garlic. Cook until the beef is browned completely with no pink remaining and vegetables are softened. Drain any excess fat from the pot.
- Add Potatoes and Broth: Stir in the peeled and diced potatoes, beef broth, diced tomatoes with juice, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer and cook uncovered for 10 minutes to begin softening the potatoes.
- Incorporate Frozen Vegetables: Add the frozen mixed vegetables (corn, green bean, carrot mix) to the pot, stirring to combine evenly throughout the soup.
- Simmer Until Tender: Continue to simmer the soup for an additional 15 to 20 minutes, or until the potatoes are fork-tender and the flavors have melded. Adjust seasoning with salt and pepper as desired before serving.
