Description

These High Protein Frozen Peanut Butter Greek Yogurt Bites are a delicious and nutritious snack combining creamy Greek yogurt with the rich flavors of peanut butter and dark chocolate. Perfect for a quick protein boost, these bite-sized treats are coated in melted dark chocolate and lightly sprinkled with flaky sea salt for an irresistible balance of sweet and savory.

Ingredients

Scale

Main Ingredients

  • 1/2 cup full fat Greek yogurt
  • 1/4 cup powdered peanut butter
  • 1 tablespoon creamy peanut butter
  • 1/2 tablespoon maple syrup

Chocolate Coating

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt for topping (optional)

Instructions

  1. Mix the base: In a mixing bowl, combine the full fat Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir thoroughly until the mixture is smooth and well blended, ensuring all ingredients are fully incorporated.
  2. Form and freeze bites: Line a plate or small tray with parchment paper. Using a spoon, scoop the yogurt mixture into about six evenly sized bites and place them on the tray. Freeze the bites for 10 to 20 minutes or until they become firm enough to handle.
  3. Melt the chocolate coating: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in short bursts of 15 to 20 seconds, stirring in between, until the mixture is completely melted and smooth.
  4. Coat the frozen bites: Dip each frozen yogurt bite into the melted chocolate, fully coating it. If desired, sprinkle flaky sea salt on top immediately after dipping to add a touch of saltiness.
  5. Set the chocolate coating: Return the coated bites to the parchment-lined tray. Refrigerate them for 15 to 20 minutes to allow the chocolate to harden completely before serving.

Notes

  • For a dairy-free option, substitute Greek yogurt with a plant-based yogurt alternative.
  • Use natural peanut butter without added sugar or oils for a healthier snack.
  • If you prefer sweeter bites, increase the maple syrup slightly to taste.
  • To make smaller or larger bites, adjust the quantity accordingly but keep freezing times consistent.
  • Store the finished bites in an airtight container in the freezer for up to a week for best freshness.
