Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour and salt until combined evenly. Then create a well in the center of the flour mixture to prepare for the eggs.
  2. Incorporate Eggs: Crack the eggs into the flour well. Using a fork, slowly whisk the eggs while gradually incorporating flour from the edges into the eggs, stirring continuously until a sticky dough starts to form.
  3. Knead Dough: Turn the sticky dough onto a lightly floured surface and knead it thoroughly until it becomes smooth and shiny, which usually takes several minutes.
  4. Rest Dough: Wrap the kneaded dough tightly in plastic wrap and refrigerate for at least 30 minutes to overnight. This resting period hydrates the flour and makes rolling easier.
  5. Roll Dough: On a floured surface, roll out the dough to your desired thinness. Keep in mind the noodles will slightly swell during cooking, so roll them a bit thinner than you want the final thickness.
