Instructions
- Cook Vegetables: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the broccoli florets and thinly sliced carrots, cooking for about 4 minutes until the vegetables are tender but still crisp. Remove them from the pan and cover with a plate to keep warm.
- Prepare and Cook Chicken: Wipe the pan clean with a paper towel, turn the heat to high, and add the remaining tablespoon of vegetable oil. Season the chicken pieces with salt and pepper. Add them to the pan in a single layer, cooking in batches if necessary. Cook each side for 3 to 4 minutes until the chicken is golden brown and fully cooked through.
- Add Garlic: Add the minced garlic to the pan with the chicken and cook for 30 seconds to release its flavor without burning.
- Return Vegetables: Add the cooked vegetables back into the pan with the chicken and garlic. Cook together for 2 more minutes to heat through and combine flavors.
- Make Sauce Mixture: In a bowl, whisk together the chicken broth (or water), honey, and soy sauce.
- Mix Cornstarch Slurry: In a small bowl, mix the cornstarch with one tablespoon of cold water until dissolved.
- Combine and Thicken Sauce: Pour the honey soy sauce mixture over the chicken and vegetables in the pan. Cook for 30 seconds, then add the cornstarch slurry. Bring the mixture to a boil and cook for one more minute or until the sauce thickens to a glaze consistency.
- Serve: Remove from heat and serve the honey garlic chicken stir fry immediately. It pairs wonderfully with steamed rice or noodles for a complete meal.
