Rice & Avocado Mixture

  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges for serving

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper until well combined to create a flavorful marinade for the chicken.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, up to 4 hours, allowing the chicken to absorb the flavors.
  3. Cook the Rice: While the chicken marinates, bring chicken broth or water to a boil in a medium saucepan. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes or until tender and liquid is absorbed. Fluff cooked rice with a fork and set aside.
  4. Grill the Chicken: Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade, discarding any leftover marinade. Grill the chicken for 6-7 minutes per side, or until fully cooked with an internal temperature of 165°F (75°C). Remove and let rest briefly.
