Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the pie later.
- Cook the potatoes: Place peeled and cubed Russet potatoes into a large pot of boiling water. Boil them for 12-15 minutes or until they are fork-tender. Drain thoroughly and set aside.
- Brown the beef and sauté onions: While the potatoes cook, heat a skillet over medium heat. Add ground beef and chopped onions to the skillet, cooking until the beef is browned and onions are softened, about 8-10 minutes.
- Add garlic and seasonings: Mix in minced garlic, salt, and black pepper. Cook for an additional minute to release garlic aroma.
- Incorporate corn and BBQ sauce: Stir in the drained corn and BBQ sauce into the beef mixture. Remove the skillet from heat and set this mixture aside.
- Prepare the mashed potato topping: Mash the cooked potatoes with softened cream cheese, butter, whole milk or cream, a pinch of white pepper, and salt and black pepper to taste. Mix until smooth and creamy.
- Assemble the pie: Pour the beef and corn mixture evenly into a 9” x 13” baking dish. Spread the mashed potato mixture evenly over the beef layer.
- Add cheese topping: Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.
- Bake the pie: Place the baking dish in the preheated oven and bake for 25-35 minutes, or until the cheddar cheese is melted and browned around the edges.
