Meat Sauce
- 1/2 large white onion, diced

- 1 lb ground turkey
- 2 (24 oz) jars red marinara sauce, or homemade
- 2 Tbsp olive oil, divided
Ravioli Layer
- 20–30 oz cheese ravioli, cooked and cooled
Ricotta Mixture
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup fresh basil, chopped
- 2 Tbsp fresh parsley, chopped
Topping
- 12 oz fresh mozzarella cheese, shredded
Instructions
- Sauté the aromatics: Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Add the diced onion along with a pinch of salt and pepper, cooking for about 5 minutes until soft and fragrant, stirring occasionally.
- Cook the turkey: Add the minced garlic and cook for about 1 minute until aromatic. Then add the ground turkey and Italian seasoning. Cook thoroughly, stirring and breaking apart the meat, until no longer pink.
- Add marinara sauce: Stir in one jar (~2 cups) of marinara sauce to the turkey mixture. Combine well and then remove from heat. Set aside.
- Prepare the ravioli: Cook the cheese ravioli according to package instructions, typically boiling for 4-5 minutes. Drain and rinse under cold water to stop cooking. Toss the ravioli with 1-2 tablespoons of olive oil to keep them from sticking, then set aside.
- Mix ricotta filling: In a medium bowl, combine the ricotta cheese, egg, chopped parsley, and chopped basil. Mix until smooth and well blended.
- Preheat oven and assemble: Preheat your oven to 375°F (190°C). In a 9×13 inch baking dish, spread 1 cup of marinara sauce in an even layer. Next, add a layer of ravioli, followed by the entire meat sauce layer. Add another layer of ravioli, then spoon over the ricotta mixture. Layer with more ravioli, the remaining marinara sauce, and finally top with shredded mozzarella cheese.
- Bake the lasagna: Cover the dish loosely with aluminum foil, taking care not to touch the cheese. Bake for 30 minutes covered, then remove the foil and bake uncovered for an additional 25 minutes. For a golden bubbly top, broil for 2-3 minutes, watching carefully to avoid burning.
