Maple-Balsamic Sauce

  • 2 Tbsp maple syrup

Instructions

  1. Toast the Pecans: Preheat the oven to 375°F (190°C). Spread pecans on a parchment-lined baking pan and toast for 5-6 minutes until fragrant. Remove from oven, roughly chop, and set aside.
  2. Preheat the Oven: Increase oven temperature to 425°F (220°C) and prepare a separate baking pan for roasting the sprouts.
  3. Prep the Brussel Sprouts: Trim the bottoms and discard any wilted leaves. Cut sprouts in half or quarters if larger. Place in a large bowl and toss with olive oil, salt, and black pepper until evenly coated.
  4. Roast the Sprouts: Spread the brussels sprouts cut side down on the baking pan in a single layer. Roast in the oven for 20-25 minutes until tender and slightly caramelized.
  5. Make the Sauce: While the sprouts roast, whisk together maple syrup, balsamic vinegar, and dijon mustard in a small bowl until well combined.
  6. Toss: Transfer the roasted brussels sprouts to a large bowl. Add dried cranberries and crumbled goat cheese. Drizzle the maple-balsamic sauce over and toss gently to coat evenly.
  7. Serve: Plate the dressed brussels sprouts immediately and sprinkle with the toasted chopped pecans for crunch. Serve warm.
