  • 1/3 cup ketchup
  • 1 can beef consomme soup (10.5 oz)
  • 1/2 teaspoon dried basil
  • 1 tablespoon corn starch
  • Several drops of Frank’s red hot sauce or Tabasco hot sauce (optional)

Instructions

  1. Prepare the meatloaf mixture: In a large bowl, combine all the meatloaf ingredients including the chopped meat, eggs, finely chopped onion, chopped parsley, salt, pepper, oatmeal, Italian bread crumbs, shredded carrots, shredded celery, and ketchup. Mix thoroughly to ensure all ingredients are evenly incorporated.
  2. Shape and bake the meatloaf: Form the mixture into a loaf shape and place it in a baking pan. Bake in a preheated oven at 350°F (175°C) for 1 hour until cooked through and firm.
  3. Prepare the tomato beef sauce: In a small bowl, mix the ketchup and corn starch together until smooth. Stir in the beef consomme soup, dried basil, and optional hot sauce. Transfer the mixture to a microwave-safe container and microwave for 3 minutes. Stir well to dissolve any lumps.
  4. Apply sauce and finish baking: After the initial baking time, pour the prepared sauce evenly over the meatloaf. Return the meatloaf to the oven and bake for an additional 30 minutes, allowing the sauce to thicken and glaze the meatloaf.
