  • 1 bunch of parsley
  • 4 sprigs of thyme (or 2 tsp dried thyme)
  • 1 tsp turmeric powder
  • 1 inch ginger root, finely chopped
  • 1 TBSP Atlantic dulse flakes

Vegetables

  • 3 lb bag sweet potatoes (or 45 large sweet potatoes), peeled and cubed
  • 1 bunch celery, diced
  • 1 large yellow onion, diced
  • 6 large garlic cloves

Instructions

  1. Prepare Ingredients: Wash and chop all vegetables and herbs. Peel and cube the sweet potatoes, dice the celery and onion, finely chop the ginger, and peel the garlic cloves.
  2. Combine in Soup Pot: Place the sweet potatoes, celery, onion, garlic, parsley, thyme, turmeric powder, chopped ginger, and Atlantic dulse flakes into a large soup pot.
  3. Cook the Soup: Add enough water to cover the ingredients. Bring everything to a good boil over medium-high heat, then reduce the heat to a low simmer and cover the pot. Let it cook covered for about one hour until the vegetables are tender and flavors meld.
  4. Remove Thyme Twigs: After cooking, carefully remove any large thyme twigs from the soup to avoid a bitter taste.
  5. Blend the Soup: Carefully transfer the soup in batches to a blender. Blend until mostly smooth, keeping some chunkiness if preferred. Alternatively, use an immersion blender directly in the pot.
  6. Serve and Enjoy: Pour the blended soup into mugs or bowls and enjoy the nourishing, thyroid-supportive meal warm.
