- 1 bunch of parsley
- 4 sprigs of thyme (or 2 tsp dried thyme)
- 1 tsp turmeric powder
- 1 inch ginger root, finely chopped
- 1 TBSP Atlantic dulse flakes
Vegetables
- 3 lb bag sweet potatoes (or 4–5 large sweet potatoes), peeled and cubed
- 1 bunch celery, diced
- 1 large yellow onion, diced
- 6 large garlic cloves
Instructions
- Prepare Ingredients: Wash and chop all vegetables and herbs. Peel and cube the sweet potatoes, dice the celery and onion, finely chop the ginger, and peel the garlic cloves.
- Combine in Soup Pot: Place the sweet potatoes, celery, onion, garlic, parsley, thyme, turmeric powder, chopped ginger, and Atlantic dulse flakes into a large soup pot.
- Cook the Soup: Add enough water to cover the ingredients. Bring everything to a good boil over medium-high heat, then reduce the heat to a low simmer and cover the pot. Let it cook covered for about one hour until the vegetables are tender and flavors meld.
- Remove Thyme Twigs: After cooking, carefully remove any large thyme twigs from the soup to avoid a bitter taste.
- Blend the Soup: Carefully transfer the soup in batches to a blender. Blend until mostly smooth, keeping some chunkiness if preferred. Alternatively, use an immersion blender directly in the pot.
- Serve and Enjoy: Pour the blended soup into mugs or bowls and enjoy the nourishing, thyroid-supportive meal warm.
