Vegetables & Greens
- 1 cup arugula
- 2 cups cabbage, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, chopped
- 1 scallion, sliced
- 2 small radishes, chopped
- 1 roasted red pepper, chopped
Other Ingredients
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper, to taste
- 2 tbsp feta cheese, crumbled
Instructions
- Cook the Salmon: If not using pre-cooked salmon, sear the salmon fillet in a pan over medium heat for 5-6 minutes on each side until cooked through, or cook it in an air fryer. You may season it if desired, or leave plain for versatility.
- Prepare the Vegetables: Chop the cabbage, cucumber, scallion, radishes, cherry tomatoes, and roasted red pepper into bite-sized pieces.
- Assemble the Salad: In a large salad bowl, add the arugula and chopped vegetables. Flake the cooked salmon into bite-sized pieces and crumble the feta cheese over the salad. Add minced garlic.
- Dress the Salad: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste, then gently toss all ingredients together to combine evenly.
- Serve: Enjoy the salad immediately for the freshest taste and texture.
