Ingredients
Scale
Chicken Marinade
- 1 lb boneless, skinless chicken thighs
- 1/4 cup Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Roasted Sweet Potatoes
- 2 medium sweet potatoes, cubed
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes and chicken.
- Roast Sweet Potatoes: Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes until they are tender and slightly caramelized.
- Prepare Marinade: While the sweet potatoes are roasting, whisk together Dijon mustard, maple syrup, apple cider vinegar, the remaining 1 tablespoon olive oil, dried thyme, salt, and pepper in a bowl.
- Marinate Chicken: Add the chicken thighs to the marinade and ensure each piece is well coated with the sauce.
- Add Chicken to Baking Sheet: Once the sweet potatoes are almost done, place the marinated chicken thighs on the same baking sheet, spreading them out evenly to allow even cooking.
- Roast Chicken and Sweet Potatoes: Continue roasting everything together for an additional 15-20 minutes, or until the chicken is fully cooked through and the sauce has thickened.
- Serve: Remove from the oven and serve the roasted chicken thighs alongside the caramelized sweet potatoes in serving bowls for a delicious, wholesome meal.
Notes
- You can substitute chicken breasts if preferred, but adjust cooking time accordingly to avoid drying out.
- For extra veggies, consider adding broccoli or Brussels sprouts to the baking sheet.
- Leftovers keep well in the refrigerator for up to 3 days.
- Use pure maple syrup for the best authentic flavor.
- If you like it spicier, add a pinch of cayenne pepper to the marinade.
