Ingredients

Scale

Chicken Marinade

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup Dijon mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes and chicken.
  2. Roast Sweet Potatoes: Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes until they are tender and slightly caramelized.
  3. Prepare Marinade: While the sweet potatoes are roasting, whisk together Dijon mustard, maple syrup, apple cider vinegar, the remaining 1 tablespoon olive oil, dried thyme, salt, and pepper in a bowl.
  4. Marinate Chicken: Add the chicken thighs to the marinade and ensure each piece is well coated with the sauce.
  5. Add Chicken to Baking Sheet: Once the sweet potatoes are almost done, place the marinated chicken thighs on the same baking sheet, spreading them out evenly to allow even cooking.
  6. Roast Chicken and Sweet Potatoes: Continue roasting everything together for an additional 15-20 minutes, or until the chicken is fully cooked through and the sauce has thickened.
  7. Serve: Remove from the oven and serve the roasted chicken thighs alongside the caramelized sweet potatoes in serving bowls for a delicious, wholesome meal.

Notes

  • You can substitute chicken breasts if preferred, but adjust cooking time accordingly to avoid drying out.
  • For extra veggies, consider adding broccoli or Brussels sprouts to the baking sheet.
  • Leftovers keep well in the refrigerator for up to 3 days.
  • Use pure maple syrup for the best authentic flavor.
  • If you like it spicier, add a pinch of cayenne pepper to the marinade.
