  • Author: Charlotte
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

This One-Pan Bold Honey BBQ Chicken Rice recipe combines tender, flavorful chicken thighs with sweet and tangy BBQ sauce, honey, and perfectly cooked rice all in one skillet. Easy to prepare and packed with vibrant vegetables, this dish offers a comforting and hearty meal with minimal cleanup.

Ingredients

Scale

Chicken and Seasoning

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Main Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)

Instructions

  1. Season and Sear Chicken: In a large skillet over medium heat, season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until browned and cooked through.
  2. Mix Sauce: In a small bowl, whisk together the BBQ sauce and honey. Pour this mixture evenly over the seared chicken in the skillet.
  3. Add Rice and Broth: Add the long-grain rice and chicken broth to the skillet. Stir gently to combine all ingredients, ensuring the rice is evenly distributed in the liquid.
  4. Simmer and Cook Rice: Bring the mixture to a simmer, then cover the skillet and reduce the heat to low. Cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Steam Vegetables: In the last 5 minutes of cooking, add the mixed vegetables on top of the rice and chicken mixture. Cover again and allow the vegetables to steam until tender.
  6. Rest and Serve: Remove the skillet from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and serve the honey BBQ chicken rice warm for a complete meal.

Notes

  • You can substitute chicken breasts for thighs if preferred, but thighs provide more flavor and juiciness.
  • If fresh vegetables are used, chop them uniformly for even cooking.
  • For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
  • Make sure to keep the heat low when simmering to prevent burning the rice at the bottom.
  • This dish can be doubled for larger servings; just ensure your skillet is large enough to cook evenly.
