Instructions
- Combine Ingredients: In a large bowl, thoroughly mix the creamy peanut butter, Rice Chex crumbs, and 1 cup of powdered sugar until all ingredients are evenly incorporated and the mixture is sticky enough to form balls.
- Form Balls: Using a medium cookie scoop (about 1½ tablespoons), portion the mixture into even amounts. Roll each portion between your palms to create smooth, uniform balls.
- Melt Chocolate: Place the chocolate melting wafers in a microwave-safe bowl. Heat in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth.
- Dip Truffles: Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate until fully coated. Carefully place the coated balls onto a parchment or wax paper-lined cookie sheet to allow the chocolate to set.
- Coat with Powdered Sugar: Once the chocolate has fully hardened, roll each ball in the remaining powdered sugar to create a sweet, decorative outer layer. Place them back on the sheet to finalize setting before serving.
