Ingredients
Scale
Mushrooms
- 16 even-sized open cap mushrooms, stems cut level with caps
Garlic Butter Mixture
- 3 cloves garlic, chopped very fine
- 1 1/2 sticks unsalted butter, softened (about 12 tablespoons)
- 2 tablespoons fresh thyme, chopped
- 1 1/2 tablespoons lemon juice
- Salt and pepper, to taste
Other
- 3 tablespoons vegetable oil or corn oil
- 1/2 cup bread crumbs
Instructions
- Preheat Oven and Prepare Mushrooms: Preheat your oven to 400°F (205°C). Trim the mushroom stems so they are level with the cap to ensure even cooking and a nice appearance.
- Pan-Fry Mushrooms: Heat the vegetable or corn oil in a skillet over medium-high heat. Lightly fry the mushrooms, placing them cap-side down, for about 20 seconds to develop a slight sear and lock in moisture.
- Arrange for Roasting: Place the mushrooms in a shallow roasting pan with the stems facing upwards to hold the garlic butter mixture.
- Prepare Garlic Butter Mixture: In a bowl, combine softened unsalted butter, chopped garlic, chopped fresh thyme, lemon juice, salt, and pepper. Mix thoroughly to blend all the flavors.
- Add Garlic Butter to Mushrooms: Spoon a little of the garlic butter mixture onto each mushroom stem cavity, ensuring it is evenly distributed.
- Top with Bread Crumbs: Lightly press the bread crumbs onto the garlic butter on each mushroom to create a crispy topping.
- Roast Mushrooms: Place the roasting pan in the preheated oven and cook for 10 minutes until the mushrooms are tender, and the bread crumbs are golden brown.
- Serve: Remove from the oven and serve immediately as a delicious appetizer or side dish. Enjoy your roasted garlic mushrooms!
Notes
- Using even-sized mushrooms ensures uniform cooking.
- Softening the butter beforehand makes mixing easier.
- For a richer flavor, you can use unsalted butter combined with a small pinch of fine sea salt.
- Fresh thyme is preferred for the best aroma, but dried thyme can be used if fresh is unavailable (reduce quantity to 1 tablespoon).
- If you want a gluten-free version, substitute bread crumbs with gluten-free crumbs or omit entirely.
- Be careful not to over-fry the mushrooms in the pan; a quick sear is enough before roasting.
- Serve these mushrooms warm as they taste best right out of the oven.
