Ingredients
Scale
Main Ingredients
- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup dry red wine
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Set your oven to 300°F (150°C) to prepare for slow roasting the beef.
- Sear the Roast: Heat olive oil in a large Dutch oven over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the roast for 4-5 minutes on each side until browned. Remove and set aside.
- Caramelize Onions and Garlic: In the same pot, add the thinly sliced onions and cook over medium heat, stirring frequently, until caramelized, about 15-20 minutes. Add minced garlic and cook for 1-2 minutes more.
- Add Liquids and Herbs: Pour in beef broth, red wine, and Worcestershire sauce. Stir in dried thyme and rosemary, scraping the bottom of the pot to lift browned bits for extra flavor.
- Cook the Roast: Return the seared chuck roast to the pot, making sure it is submerged in the liquid. Cover the pot with a lid and transfer to the oven.
- Slow Roast: Cook the roast for 3 to 4 hours until it’s tender and easy to shred with a fork.
- Optional Sauce Thickening: If you want a thicker sauce, remove the roast and place the pot on the stovetop over medium heat. Whisk together flour with a small amount of water to make a slurry, then stir it into the sauce. Simmer until thickened, a few minutes.
- Serve: Slice or shred the cooked roast. Serve hot with the rich onion sauce and garnish with fresh chopped parsley.
Notes
- For best flavor, use a dry red wine like Cabernet Sauvignon or Merlot.
- Make sure to brown the meat well to develop rich flavor.
- Caramelizing onions slowly is key to unlocking the signature French onion taste.
- The cooking time can vary depending on the size and thickness of your roast.
- The flour slurry should be added gradually to avoid lumps in the sauce.
- This dish pairs well with mashed potatoes or crusty bread to soak up the sauce.
