- 8 oz. Linguine pasta
Shrimp and Sauce
- 1 lb. Shrimp, peeled and deveined (tails on or off)
- 1 Tbsp. Olive oil
- 4 tsp. Minced garlic
- ¼ C. White cooking wine
- ½ tsp. Oregano
- ½ C. Chicken broth
- ¼ C. Parsley, chopped
- 2 Tbsp. Fresh basil, chopped
- 4 Tbsp. Butter
- ½ Onion, chopped
- Salt and pepper to taste
Instructions
- Season and Cook Shrimp: Season the shrimp with salt and pepper to taste. Heat a skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Add the shrimp and sauté until fully cooked, about 2-3 minutes per side depending on size. Remove shrimp from skillet and set aside.
- Sauté Onion: In the same skillet, add the remaining 2 tablespoons of butter and the chopped onion. Sauté over medium heat until the onion is softened and translucent, approximately 3-4 minutes.
- Add Garlic: Stir in the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn the garlic.
- Deglaze with Wine: Pour in the white cooking wine and cook, stirring occasionally, until the liquid is reduced by half, roughly 2-3 minutes.
- Add Broth and Herbs: Stir in the chicken broth, chopped parsley, oregano, and basil. Allow the sauce to simmer gently for another 2-3 minutes to blend the flavors.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and toss well to coat them in the sauce. Cook together for an additional minute to heat through.
- Prepare Pasta: Meanwhile, cook the linguine pasta according to package instructions until al dente. Drain and set aside.
- Serve: Plate the cooked pasta and spoon the shrimp scampi sauce over the top. Garnish with additional fresh parsley or basil if desired and serve immediately.

- For a richer flavor, use unsalted butter so you can better control the salt level.
- White cooking wine can be substituted with dry white wine or vermouth for more depth.
- Make sure not to overcook shrimp; they should be opaque and firm.
