Ingredients

Scale

Protein

  • 2 chicken breasts, diced

Vegetables & Aromatics

  • 1 green bell pepper, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 2 cloves garlic, minced

Sauces & Seasonings

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp chili flakes (optional)

Thickening Agent

  • 1 tsp cornstarch + 2 tbsp water (for slurry)

Accompaniments & Garnish

  • 1 cup cooked jasmine rice
  • Sesame seeds (for garnish)
  • Sliced green onions (for garnish)

Instructions

  1. Prepare the Chicken: Heat a skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil and swirl to coat the pan. Add the diced chicken breasts and stir-fry for 5-6 minutes until they turn golden brown and are cooked through. Once done, remove the chicken from the skillet and set it aside.
  2. Sauté Garlic and Peppers: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then add the sliced green and red bell peppers. Stir-fry them for 3-4 minutes until they become tender-crisp but still retain some crunch.
  3. Combine Chicken and Sauces: Return the cooked chicken to the skillet with the peppers. Pour in the soy sauce, oyster sauce, and chili flakes if using. Stir everything well to ensure the chicken and vegetables are evenly coated with the flavorful sauce.
  4. Thicken the Sauce: In a small bowl, mix 1 teaspoon of cornstarch with 2 tablespoons of water to create a slurry. Pour this mixture into the skillet and cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens and becomes glossy.
  5. Serve: Plate a bed of steamed jasmine rice and spoon the sizzling garlic chicken stir-fry over the top. Garnish the dish with a sprinkle of sesame seeds and sliced green onions to add texture and fresh flavor before serving.

Notes

  • You can substitute chicken breasts with thigh meat for juicier texture.
  • Adjust chili flakes to taste for more or less heat.
  • For a gluten-free version, use tamari instead of soy sauce and ensure oyster sauce is gluten-free.
  • Prep all ingredients before cooking to ensure smooth stir-fry process.
  • Leftover stir-fry can be stored in an airtight container in the refrigerator for up to 2 days.
