Crust

  • 30 graham crackers (2 packs), crushed to crumbs
  • 1 cup unsalted butter, melted
  • 1/4 teaspoon salt

Toppings

  • 16 ounces mini marshmallows (about 6 cups), divided
  • 12 ounces milk chocolate chips (1 bag)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare Crust Mixture: In a mixing bowl, combine the crushed graham cracker crumbs, melted butter, and salt. Reserve 1/4 cup of the crumbs for topping later.
  3. Form and Bake Crust: Press the graham cracker mixture evenly into the bottom of a 9×13-inch baking pan. Bake for 10 minutes until set and slightly golden.
  4. Add Marshmallows and Bake: Remove the crust from the oven, evenly sprinkle 4 cups of mini marshmallows on top, and return to bake for another 10 minutes until marshmallows puff up and turn lightly golden.
  5. Cool and Deflate Marshmallows: Let the pan cool for 5 minutes so the marshmallows deflate slightly, creating a better layer for the chocolate.
  6. Top with Chocolate Chips: Evenly spread the entire 12-ounce bag of milk chocolate chips over the marshmallow layer.
  7. Add Remaining Toppings and Bake Again: Sprinkle the remaining marshmallows and reserved graham cracker crumbs on top, then bake for an additional 10 minutes until marshmallows are toasted and chocolate begins to melt.
  8. Final Cooling: Remove from oven and let cool completely to allow layers to set before slicing into bars.

  • For best results, allow the bars to cool completely so they hold their shape when sliced.
  • You can substitute semi-sweet chocolate chips if you prefer a less sweet flavor.
  • Using mini marshmallows helps in even melting and browning; large marshmallows can be chopped if necessary.
