Instructions
- Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until they become soft and fragrant, about 3-4 minutes.
- Cook Spinach: Add the chopped spinach to the skillet with the onion and garlic, cooking until wilted, which should take around 2-3 minutes. Remove from heat and let it cool slightly.
- Prepare Burger Mixture: In a large mixing bowl, mash the cooked lentils until mostly smooth. Add the sautéed spinach, onion, and garlic mixture along with the egg or flaxseed egg, breadcrumbs or oat flour, cumin, paprika, salt, and black pepper. Mix thoroughly until all ingredients are well combined and the mixture holds together.
- Form Patties: Shape the mixture into 4 to 5 evenly sized patties, making sure they are compact to avoid falling apart during cooking.
- Pan-fry Burgers: Heat a non-stick skillet over medium heat with a little olive oil. Fry each patty for 3-4 minutes on each side until they are golden brown and cooked through. Remove from the skillet and serve warm.

- For a vegan version, use a flaxseed egg instead of a regular egg.
