  • 6 tbsp nutritional yeast flakes

Topping

  • 1 cup vegan grated cheese

Instructions

  1. Preheat the oven: Set your oven to 356 ºF (180 ºC) to prepare for baking the casserole.
  2. Prepare the vegetables: Peel the potatoes and cut them into bite-sized cubes. Wash the broccoli thoroughly and chop into small florets.
  3. Cook potatoes and broccoli lightly: In a large pot, combine the dairy-free cooking cream with dried rosemary, oregano, thyme, paprika, pressed garlic, salt, and pepper. Bring this mixture to a boil. Add the potatoes and broccoli, stir well, cover with a lid, and cook for 2 minutes. Afterward, transfer the mixture to a baking dish.
  4. Make the sauce: Melt vegan butter in a saucepan over medium heat. Whisk in the flour and sauté for a few seconds until the mixture turns lightly golden. Gradually add the vegetable broth while stirring, then stir in the nutritional yeast flakes. Bring the sauce to a boil and simmer for about 2 minutes until slightly thickened. Season with salt and pepper to taste.
  5. Combine sauce and vegetables: Pour the prepared sauce evenly over the potatoes and broccoli in the baking dish. Toss gently to coat all the pieces well.
