- 1 Tablespoon of vegetable or olive oil
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 large carrot, diced
- 2 ribs of celery, sliced
- 2 cups of split peas
- 6 cups of vegetable broth
- Salt and pepper, to taste
Instructions
- Heat the oil: Heat 1 tablespoon of vegetable or olive oil in a large pot with a lid over medium heat to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onion, minced garlic, diced carrot, and sliced celery to the pot. Cook and stir these vegetables for 5 to 7 minutes until they soften and become fragrant.
- Add split peas and broth: Stir in 2 cups of split peas with the sautéed vegetables, then pour in 6 cups of vegetable broth. Cover the pot with the lid, reduce the heat to a simmer, and let the soup cook for 45 minutes allowing the peas to soften and flavors to meld.
- Simmer uncovered: Remove the lid and continue to cook the soup uncovered for an additional 15 minutes. This allows the soup to thicken slightly and any excess liquid to evaporate.
- Season and serve: Stir the soup, then season with salt and pepper to taste. Serve hot, garnished simply with the added seasoning for a warm, wholesome meal.
