- 7 cups vegetable broth

Instructions
- Sauté Vegetables: In a large pot, heat the oil over medium heat. Add the diced onion and sauté for 1 minute until slightly softened. Add the chopped celery and sliced carrots and continue to sauté for 4 minutes to build flavor. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Cook Barley and Broccoli: Add the barley, broccoli florets, and vegetable broth to the pot. Increase the heat to bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and simmer until the barley is tender, which should take about 25 to 30 minutes.
- Finish Soup: Stir in the chopped cilantro for freshness. Optionally, garnish with red chili flakes for a bit of heat. Serve the soup hot for a nutritious and warming meal.
Notes
- For a thicker soup, you can add more barley or reduce the amount of broth.
- Feel free to substitute broccoli with other vegetables like green beans or peas.
